In a competitive environment, the current hospitality offers and services created around accommodation and catering do not guarantee the attractiveness nor the profitability necessary to the long-term performance of this sector’s economic model. Modeling a "new" hospitality is required to meet the clientele’s expectations while taking into account operating costs, service production, operating expenses associated to technologies uses. The overall objective of this research is to study and try out a new organizational model whose value chain meets collaborators’ and customers’ expectations.
