Language and learning in the service activity at restaurant.

Situated at the intersection of vocational didactics and interactional linguistics, in the context of the Paul Bocuse Institute, this research, as regards the scientific objective, consists in studying teaching and learning methods and practices of table waiting professional skills related to language and interactions. For, if they have previously been identified as crucial to the profession, they are still not subject to a scientific training. The operational objective of the study is based on an experimentation of new modalities of teaching and learning the skills cited, in order to provide, in collaboration with the training team, new tools for didactic practices, and finally include them as part of the training system.
